The 2021 Cabernet Franc Reserve unfolds with complex aromas of black cherry, tobacco, dried herbs, and violet. On the palate, a smooth, velvety texture reveals rich flavors of raspberry, plum, and currant, complemented by hints of cedar, graphite, and a touch of cocoa. The wine’s well-integrated acidity and soft tannins contribute to a long, polished finish with subtle spice nuances.

WINEMAKING
The fruit was harvested at night, destemmed, and cold soaked before fermenting in small 1.5-ton bins and open-top stainless steel tanks. After fermentation, the wine was gently pressed, settled, and racked to French oak barrels, where it aged for 30 months. Following aging, Winemaker Adrian Bolshoi carefully selected 14 exceptional barrels, each contributing to the wine’s remarkable depth and balance. The barrels featured 50% new oak, which added subtle notes of vanilla, toasted spice, and enhanced the wine’s complexity.
