The 2021 Pinot Noir Estate opens with warm aromas of black cherry, cinnamon, earth, and cedar. WINEMAKING
After nighttime harvesting, the fruit was destemmed and cold soaked for four days to gently extract color and flavor. The clonal lots were co-fermented over two weeks with daily pumpovers to ensure optimal extraction. After fermentation, the wine was settled in stainless steel tanks, then racked to French oak barrels, where it aged for 20 months. Twenty percent of the barrels featured new oak, adding depth and complexity. The blending of four distinct estate-grown clones (Pommard, 115, 667, and 777) allowed Winemaker Adrian Bolshoi to craft a Pinot Noir of natural complexity and elegance.
